It is my privilege to write this testimonial today for Peter whom I know since 1995 when he joined The Oberoi Group as Corporate Executive Chef. During his 6 year tenure with us, the last year in the capacity of corporate Director of F&B, Peter did not only live up to our high expectations, but exceeded them in all aspects of responsibilities he held and much beyond that.
At the time of his hiring, The Oberoi Group was in expansion mode with some 11 new Hotels on the drawing boards, developing 2 new brands, namely the 5*+ Vilas Resorts and the 3*+ Trident Tourist Hotels plus also 2 more 5* Oberoi properties. Peter formed an integral part of a comprehensive corporate office team that was set up in Delhi to oversee and drive these projects, starting from design to F&B outlet concept development, establishing of P&P’s, and consequent hiring, training and coaching of F&B and Culinary personnel.
This was in addition of also being responsible for the Kitchen and F&B operations of some 20 existing Hotels & Resorts located in India, Sri Lanka, Egypt, Indonesia and Mauritius where Peter was frequently assigned for operational support and quality standard implementation/control, training and motivational visits that he always conducted with a high success ratio.
The Oberoi Group’s portfolio also includes the Oberoi Centre of Learning & Development (OCLD), Airline Catering units and a central butchery and delicatessen unit where Peter was responsible for the conceptualization of numerous innovative development programs and new product lines plus updating the culinary curricula for OCLD and orchestrating many benchmark setting workshops, culinary competitions, companywide training activities, promotions and conferences, etc.
I personally had the pleasure of working closely together with Peter on many occasions and truly enjoyed our interactions, both on a professional and personal level. Peter proved to be quite the task master and never lost sight or focus on the big picture despite of all these ongoing activities. While having a pleasant, calm and balanced personality, Peter is also disciplined, organized and 100% quality & result oriented plus full of an infectious positive energy, enthusiasm and dedication.
For me, one of Peter’s most valuable assets was however his people and team building skills that allowed him to build a strong, stable, loyal and fantastically motivated F&B team who were proud to learn and work with him and his achievements & legacy lived on long after his leaving the company at the end of 2001.
Peter has now entered a new chapter in his professional life and I wish him all the very best for a successful venture with O.D.E.S. I have no doubt that our paths will cross again and will positively consider using his companies’ services in the future and when the need arises.
